Corn syrup (DE 20-25) is made using maltose as its main ingredient. It has one third the sweetness of sugar. It can suppress the crystallization of sucrose and dextrose when it is with them and can provide glossiness to products. It is suitable for ice cake, ice cream, coffee cream, etc.
