Locust Bean Gum Is a hydrocolloid obtained from the endosperm of the seeds of the carob fruit. After a de-husking, de-germination and milling process, it is turned into a fine powder. This product has reduce ice crystallization and is soluble in hot water. It is primarily used as a thickening agent in many foods.
