Bel'Ase 2000 B is an enzymatic preparation of xylanase from Bacillus subtilis and amylase from Aspergillus oryzae for use in dough conditioners. It is especially recommended in small crusty goods like rolls in direct dough processing methods using regular bakery flour. Bel'Ase 2000 B is not recommended for bread making methods involving freezing, retarding or partial baking.
