Polylysin is a homopolymer of L-lysine, one of the essential amino acids. It is prepared from a fermentation process using Streptomyces albulus under aerobic conditions. This product is intended to serve as a antimicrobial agent or preservative for sliced fish, sushi, noodles, and cooked vegetables.
