Agar powder 

Agar powder is derived from gracilaria, a bright red sea vegetable. It has excellent gelling properties and is used in doughnuts, marmalades, jams, candy, cheese, puddings and gelatin fruit desserts, among many other food uses. More acidic foods such as strawberries and citrus fruits may require higher levels of agar powder for gelling.

Certain fruits such as kiwis, papayas, mangoes and peaches are too acid and inhibit gelling completely. Agar-agar is approximately 80% fiber, so it can serve as a great intestinal regulator. It is white and semi-translucent and is sold in packages as washed and dried strips or in powdered form.
