Gellan Gum Low Acyl is a white water-soluble powder that is produced by Pseudomonas elodea. Gellan Gum Low Acyl is primary used in the food and beverage industry as a gelling agent (alternative to agar), a food additive, a thickener, emulsifier, and stabilizer. Specifically, it is intended for use in candy, dairy products, jams, flour products, soy milks to keep the soy protein suspended in the milk.
