Sorbic Acid 

Sorbic Acid is a food additive found in the berries of the mountain ash, and used as a food additive to prevent the growth of molds and as an additive for certain synthetic coatings. It is a white, crystalline, unsaturated carboxylic acid, and is used in cheeses, wines and baked goods. It reacts with potassium to make potassium sorbate and with calcium to make calcium sorbate which are also used as anti-fungal.
