Fumaric Acid 

Fumaric Acid is a food additive used as a flavoring agent. It is the sourest tasting of the organic acids; three parts of fumaric acid are as sour as five parts of citric acid. It is used as an anti-oxidant, a mordant (a substance that helps dyes stick to fabric), and as a buffering agent (helps maintain a particular acidity or alkalinity). It is also used as an anti-fungal agent in boxed foods such as cake mixes and flours, fruit drinks, and tortillas. Fumaric Acid is also added to bread to increase the porosity of the final baked product.
