Red Cabbage Color is extracted and purified from edible vegetable B. oleraea Var. This product consists of a mixture of anthocyanins, and is a purple red liquid, soluble in water and ethanol, and insoluble in oil. Red Cabbage Color is stable under acidic pH ranges. At neutral pH, the color is blue. In alkaline conditions, the color is green and unstable. It can be used as a color in wines, beverages, soaked foods, cakes, candies, jams and jellies.
