Calcium Caseinate is a white to yellowish free flowing powder with a milky taste and smell. It is obtained through performance of extrusion process of acid casein i.e. dissolving casein and processing in 135 °C for 15 seconds. Calcium Caseinate is used as an emulsifier and WPC replacer, specifically for use in the bakery and confectionery industry, hard and processed cheeses, food and pharmaceutical concentrates, drinks and dietetic products, and ice creams and whipped toppings.
