OptiSol® 1040 

OptiSol® 1040 is a partially hydrolyzed milk protein concentrate that is used to lower the viscosity in yogurt products. Known for its smooth texture and clean flavor, it is low in fat and holds a moisture content of <5.5% with a pH value of 6.0-7.0. It can be considered an allergen to those with dairy allergies as it contains milk ingredients. It is primarily used in kefirs and other drinkable yogurt products.
