Whipping cream 36% is a superior finished product that is manufactured from fresh milk of bovine origin using a centrifugal separation process. The addition of carrageen and cellulose gums produce a firm whipped texture while minimizing separation of the whipping cream during use. This product has a clean creamy taste and a light milky aroma, and the percentage of butterfat in it is approximately 35.5%. It contains no genetically-modified organisms and is Kosher certified. It is often used in production of bakery desserts such as cakes, mousses, pies, frostings, and meringues.
