Calcium Citrate is a white crystalline powder that is odorless and slightly hygroscopic. It is very difficult to dissolve in water. This product can be used as chelating agents, buffers, organization coagulants, calcium supplements and emulsifying salts. It is often used in bean products, sweetened condensed milk, cream and other melted cheese. Other uses are seen in jams and jellies, canned food, and beverages.
