Sodium Acid Pyrophosphate (SAPP) is a white powder that is soluble in water, but insoluble in ethanol. This product is used as a leavening agent to shorten the fermentation time of cakes, crackers, and pies. It can also be used to increase the fermentation speed in roasted food items, such as pizza breads. It can also be used to control the mushiness and stickiness of noodles and helps them cook in water in a relatively short time period. In breads and dough, this product helps to extend the shelf life. It may also be used as a buffering and chelating agent in canned and processed foods, and it is a scald agent in products made from potatoes and sugar syrups.
