Indigo Carmine 

Indigo Carmine is an organic compound that is used as a reddish blue food dye and pH indicator. It turns yellow in a highly basic solution and in many food products. It has the E number E132, and is also called Blue 2 and Indigotine. It produces a blue-to-purple color, and is often used in chewing gum, confectionery, food supplements, processed cheese, candy, etc.
