Sodium Bicarbonate 

Sodium Bicarbonate, also known as baking soda, appears as a white crystalline powder. It is primarily used in the food and beverage industry as a leavening agent for baked goods. It reacts with acidic components in batters, releasing carbon dioxide, which causes expansion of the batter, forming the characteristic texture in pancakes, cakes, quick breads, and other baked and fried foods. Sodium Bicarbonate can be substituted for baking powder provided sufficient acid reagent is added to the recipe. Sodium Bicarbonate is also used as a raising agent and meat tenderizer.
