Maple Syrup 

Maple Syrup is a sweetener made from the “sap”, watery fluid that circulates through a plant, carrying food and other substances to the various tissues. The liquid is usually obtained from early spring, and then treated to become concentrated by boiling. Maple Syrup is produced mainly in the forests of northeastern North America (especially in Quebec, but as well as in Ontario, the Maritime Provinces of Canada and New England mainly), and being sold today around the world, including Japan which is the main importer. Maple Syrup contains polyphenols and displays an ORAC (Oxygen Radical Absorbance Capacity) value comparable to that of common fruits and vegetables in our diet, such as broccoli. The Maple Syrup also contains large amounts of terpenes (organic compounds produced by a variety of plants), particularly the plant hormone abscisic acid (ABA). This acid is known, among others, to stimulate the release of insulin by pancreatic cells and increase the sensitivity of adipose cells to insulin, which confers the therapeutic properties of the metabolic syndrome and diabetes. It can safely be used as a sweetener in many food applications.
