Guar Gum 

Guar Gum is the ground endosperm of the seed of the Guar plant, Cyamopsis tetragonolobus L. It mainly consists of hydrocolloidal polysaccharide with a high molecular weight which has galactopyranose and mannopyranose-units in glycoside linkage that can be chemically described as galactomannan. Guar Gum is used as a binding agent, dietary fiber, and stabilizer in bread, cakes, and pastries.
