Lysozyme 

Lysozyme is a white crystalline powder that is soluble in salt solution and insoluble in acetone and ethanol solutions. This slightly sweet but odorless food preservative stabilizes the walls of bacteria, extending the shelf life of cheeses, meats and caviar. It is also used in the long ripening process of hard and semi-hard cheeses to prevent late blowing.
