Vital Wheat Gluten 

Vital Wheat Gluten is a natural protein made of wheat. Wheat gluten as a complex protein fraction is water insoluble and consists of low-­‐moleculargliadines and high-­‐molecular glutenines. The viscoelastic properties of gluten is built by these hydrated gluten fractions. Vital Wheat Gluten is produced by a special processing of extraction of wheat flour slurry. Additional processing steps are drying, refining and classification. Vital Wheat Gluten is of outstanding quality with a high biological value and aspecific amino acid distribution.
