Aqualon® CMC-7L2P is a cellulose gum, or sodium carboxymethylcellulose (CMC) that has a viscosity of 50-200, a concentration of 4, and a spindle number of 2. It is widely used as a thickener and stabilizer in foods and beverages, having the ability to form strong, oil-resistant films. Besides modifying the behavior of water, cellulose gum is useful in suspending solids and modifying the flow and texture.
