Gelatin - 250 Bloom - Pork-Skin - MM (Marshmellow) has a gel strength of 250 + 10 bloom, a viscosity of 44.0 + 6.0 mps, and a pH level of 4.90 + 0.60. This product is made of dry granules with 99% passing through a #40 mesh U.S. standard sieve. It is a purified and sterilized collagen extracted from pork-skin. Pork Skin Gelatin has no objectionable odor or flavor. It is soluble in hot water, and insoluble in cold water.
