ScanPro™ T 92/SF 

ScanPro™ T 92/SF has been developed mainly for emulsified products used as a pre-emulsion or in dry addition. However, ScanPro™ T 92/SF is also suitable for injected and reformed products. It is a costeffective protein with a high water and fat binding capacity (hot emulsions >45°C). The protein is thermoreversible and cold-setting. It is applied in emulsified cooked sausages, cold cuts and liver products, as well as in injected and reformed products.

ScanPro™ T 92/SF can improve the texture of a wide range of meat products. In cold cuts, ScanPro™ T 92/SF improves the sliceability of the end product, as it contributes with elasticity and a firm structure. ScanPro™ T 92/SF can also be used to increase yield in injected products. In smoked cooked hams, the yield can be improved by up to 10%, depending on the specific application and extension level. Because of its high gelling capability, ScanPro™ T 92/SF can reduce purge in sliced ham products, making the end product look better and reducing the risk of microbiological problems.
