ScanPro™ 340/1 

ScanPro™ 340/1 is a low collagen protein with a flavour and colour like cooked meat. It is particularly well suited for liver products, because it supports the original taste and colour of liver, and because it endures being pasteurised and sterilised. ScanPro™ 340/1 is also very suitable for dry and fermented products as an alternative to part of the production meat. Specific applications include: liver paste, liver sausage, liver pâté, salami, pepperoni, chorizo, Bierwurst, and salami sticks.

When using ScanPro™ 340/1 as an emulsifier in liver products, it provides a smooth mouthfeel in the end product. ScanPro™ 340/1 can reduce formulation costs by substituting up to 10% production meat in a salami by protein and water in a hydration ratio of 1:3 without changing the analytical values. The drying process and the pH-value are not affected when using ScanPro™ 340/1 in dried and fermented products. In emulsified products, it can help reduce formulation costs by substituting for instance 5% meat by 1 part of ScanPro™ 340/1 and 4 parts of water.
