Alkemir®-560 is a stabilizing – gelling agent for processed meat products. It is a product specially designed to be added to injection brines. Its high gel strength and interaction capacity with proteins provide an adequate texture and good juices retention. Specially indicated for the manufacture of cooked ham or shoulder.
It can be applied in the injection, as brine component. Alkemir®-560 should be added to the brine, with good stirring, once all salts have already been incorporated (chlorides, phosphates, nitrates, etc.) in order to avoid an increase of viscosity which could make the injection process difficult.
