Renifor - 21/M is a brown limpid solution. It is a microbial liquid coagulant derived from a special strain of Rhizomucor miehei. This strain does not suffer any genetic modification according to European Directive 90/220 EEC. The modifications introduced in the manufacture process of this enzyme allow to obtain a thermolabil product, which residual activity after pasteurization from 20 seconds to 68ºC (pH 6.0) is lower to a 5% initial activity. It is can be used in all type of cheeses and causes the milk coagulation per enzymatic hydrolysis of the Kappa casein.
