EMJEL P 1372 

Emjel P 1372 is a pregelatinized wheat starch derivative, applied as binding and texturing agent in sauces, ketchup, potato products and fruit fillings. This product is applied as a binding and texturing agent, with good stabilizing and dissolving properties in sauces, ketchup, mayonnaise, potato products and fruit fillings.

By the application of Emjel P 1372 in ketchup, tomato and pizza sauces a substantially shorter, more tomato purée-like structure than it has been possible so far can be obtained. It can also be used as a cold juice binder by the addition of approximately 10 % Emjel P 1372 in apple juice, after 20 minutes of swelling time, a structure similar to apple sauce is obtained.
