Empure® KJEL 110 

Empure® KJEL 110 is a clean label pregelatinized potato starch which allows the developer to create new food products comparable to products using modified starch. It is useful as a binding and thickening agent in many food products. Empure® KJEL 110 shows excellent water binding ability and in cold water it gives a transparent, short, low to medium viscous solutions with excellent storage stability. Due to the rapid water absorption this starch has to be premixed with other ingredients as for example sugar to avoid lump formation.

End products manufactured with Empure® KJEL 110 provides a short and creamy structure with excellent mouth feeling. Empure® KJEL 110 is recommended using in neutral to mild acid medium as well as in low to medium shear systems. Furthermore it shows excellent stability in chilled products. It can be used in bakery products, instant sauces, instant pudding and desserts; especially for regulation of texture and structure. This starch also can be used as binding and texturing agent with good expansion regulation properties for the manufacture of extruded snack products. In chilled products it shows excellent stability.
