Kasomel™ 2310 has a phosphates blend food grade and an appearance of hygroscopic white powder without foreign matters. It is an ideal emulsifying salt for the production of cooked cheese (or French Cancoillotte). It can be used either as emulsifying salt or as curing agent. Thanks to its high pH, it guarantees an homogeneous curing of the metton. Its ion exchange capacity is average because the calcium binding in cooked cheese is relatively weak. In reverse, it is very creaming, which insures a good water binding in the processed cheese.
