Cross Evolution® 

Cross Evolution® is a naturally produced strong fermenting yeast of the saccharomyces cerevisiae cerevisiae strain, with has a temperature range of 57.2-68 degrees fahrenheit, high alcohol potential, and low nitrogen levels. It contributes an increased mouthfeel and produces a moderate fermentation speed. Cross Evolution® is recommend for use in for Chardonnay, Chenin blanc, Gewürztraminer, Pinot blanc, Pinot gris, Riesling, Roussanne, Sauvignon blanc and Voignier.
