Lalvin 71B® 

Lalvin 71B® is a wine fermenting yeast of the saccharomyces cerevisiae cerevisiae strain, with fast fermentation speed, low nitrogen needs, and a temperature range of 59-86 degrees Fahrenheit. It produces an ester sensory effect, reinforces aromatic profiles, and creates a character described as a "fruit salad." It is used for primeur and "Vins Nouveaux" style wines of white, red, and rosé varieties.
