Lalvin BAROLO BRL 97® is a wine fermenting yeast of the saccharomyces cerevisiae cerevisiae strain, with moderate fermentation speed, medium nitrogen needs, and a temperature range of 62.6-84.2 degrees Fahrenheit. It enhances varietal character, helps retain the color of the grapes, and enhances long aging processes. It is used in the production of red wines, especially heavier varieties such as Zinfandel, Barbera, Merlot and Nebbiolo,
