Lalvin BM45 ® 

Lalvin BM45 ® is a wine fermenting yeast of the saccharomyces cerevisiae cerevisiae strain, with moderate fermentation speed, medium-to-high nitrogen requirements, and a temperature range of 64.4-82.4 degrees Fahrenheit. It enhances varietal character and complex aromas of fruit jams, rose and cherry liqueurs, and produces clean notes of sweet spices, licorice and cedar. It is used primarily in the production of red wine, but can be used as a blending component on the white variety Chardonnay to increase mouthfeel.
