Lalvin CY 3079 (Bourgoblanc)® 

Lalvin CY 3079 (Bourgoblanc)® is a wine fermenting yeast of the Saccharomyces cerevisiae cerevisiae strain, with moderate fermentation speed, medium-to-high nitrogen needs, and a temperature range of 59-77 degrees Fahrenheit. It enhances varietal character and produces rich, full mouthfeel and aromas of fresh butter, almond, honey, white flowers and pineapple. It is used primarily in the production of the white wine variety Chardonnay, but sometimes for other white and Rosé wines as well.
