Lalvin DV10® 

Lalvin DV10® is a wine fermenting yeast of the Saccharomyces cerevisiae bayanus strain, with fast fermentation speed, low nitrogen needs, temperature range of 50-95 degrees Fahrenheit, and ability to ferment pH conditions as low as 2.8. It produces a neutral sensory effect and avoids the bitterness contributions of similiar strains. It is used primarily in the production of white wines, but sometimes for red and rosé wines as well, and is often added to restart stuck fermentations.
