Lalvin ICV D80® is a wine fermenting yeast of the saccharomyces cerevisiae cerevisiae strain, with moderate fermentation speed, medium-to-high nitrogen needs, and a temperature range of 59-82.4 degrees Fahrenheit. it enhances varietal character and brings high fore-mouth volume, big mid-palate mouthfeel and intense fine grain tannin, and is characterized by ripe fruit, smoke and licorice finish. It is in the production of red wines, especially those made from musts high in sugar.
