Tara Gum is a polysaccharide special gum that turns into a highly viscous gel at low concentrations. Due to its high content of galactose, Tara Gum, compared with similar products is readily soluble at low temperatures (25 ° C) and is therefore considered an ideal substitute or complement the bean gum, guar, xanthan, etc. It has a great ability to absorb water and becomes a homogeneous gel that maintains its properties to cool or freeze.
