This recipe is for Mayonnaise with 60% oil. It uses Palsgaard® 1-2-3, salt, potassium sorbate, egg yolk, vinegar 12%, mustard paste vegetable oil, and water. Palsgaard® 1-2-3 is developed for mayonnaise with no fat, or reduced fat content up to 60%, and is providing a smooth structure with high viscosity. The dosage of Palsgaard® 1-2-3 depends on the composition of the mayonnaise product, the weight of the finished product, and the viscosity required. Generally, it should be approximately 1.5%-6%.
