Surfactant/betaine systems (e.g. alpha olefin sulfonates) tend to irritate because they defat tissue. Therefore, formulators add unsaturated molecules such as oleyl amides and oleyl betaines to mitigate the irritation, but these materials tend to oxidize to aldehydes and do not smell good.
