Glyceryl Monostearate (GMS)

Glyceryl Monostearate, commonly referred to as GMS, is an odorless white powder with a sweet flavor profile. GMS is produced by combining glycerin and stearic acid and has a minimum of 40% Monoglyceride content. The primary application for Glyceryl Monostearate is to act as an emulsifier in foods such as breads, cakes, biscuits, margarine, shortening, peanut butter, among a wide range of other consumable goods that require an overall improvement in volume, texture, and consistency. GMS is often added to food and beverage formulations to thicken the composition of a recipe in addition to preventing the product from drying out. In addition to food and beverage manufacturing, Glyceryl Monostearate finds use for industrial applications.
