Whole Processed Prunes (with Pits) are steamed and tenderized in a series of carefully controlled processes. They are then rehydrated to approximately 25-32% moisture and reinspected. Proper conditioning to a water activity of 0.70 makes the prunes microbiologically clean. At this state, the product has an extended shelf life and functions as a natural inhibitor to microorganisms.
Whole processed prunes provide an excellent bland texture in fillings for cookies and pies, donuts and tarts, meat and backed dishes, snacking, fruit pieces, and sauce bases.
