This non-diastatic barley malt syrup is made into a solid brittle cake which is granulated through a mill to produce a free flowing powder of barley malt extract. It provides more flavor but less hygroscopic properties than spray dried extract. Maltose (sweetness) promotes yeast activity, improves texture and aroma of fermented doughs, is more convenient and more concentrated than malt syrups and adds bloom and color to the crust. This product is recommended for use in bread, rolls, buns, crackers, sweet doughs, cakes, cookies, icings, fillings, breakfast drinks, candy and all products which require a true natural malt flavor. 收起
