Amaranth is a dark red to purple azo dye that is used as a food colorant or to color cosmetics. Also known as Red 2 or E123, Amaranth has the Color Index No. 16185. The dye has a heat stability level of 5 and an alkali stability level of 4, and is often used in alcoholic beverages, soft drinks, cake mixes, ice cream, jams, jellies, and processed foods.
