Guar Gum appears as a creamish-white that is a polysaccharide composed of a long straight chain of D-mannopyranose units. This product is odorless and has a bland taste. This product will disperse and swell almost completely in hot or cold water to form a viscous pseudoplastic sol and is insoluble in organic solvents. Guar Gum is used as a stabilizer in ice creams, as a food additive in dough in bakery applications, and as a lubricant or moisture binding agent in meat products.
