Caramalt

Caramalt is similar to Crystal but has a much lower colour, around 30 EBC. It is produced in much the same way as Crystal but the final roast stage is extended and at lower temperatures to meet the requirements for lower colour, higher extract and higher moisture. Unlike Crystal the endosperm does not liquefy, but remains 'floury'. Consequently, it is used where sweetness is less important but some colour enhancement and a 'dry' flavour is required, usually in lagers.
