Glucose Oxidase is an enzyme derived from the fungus Aspergillus niger. This is a food grade product typically utilized in the baking, food specialty and pharmaceutical applications. Glucose oxidase is used in beverages as an oxygen scavenger. It is also used in food manufacturing to remove residual glucose to inhibit non-enzymatic browning. The reaction is stoichiometric and stops when either oxygen or glucose is completely consumed.
