Double acting baking powder means the powder reacts twice, once in the bowl when moisture is added and again when heat is applied. Leavening CO2 is released by the reaction of sodium aluminum sulfate and monocalcium phosphate in the presence of moisture, then 30% is released at batter temperature, and the remainder is released when heated. This reaction provides lift, and tenderness to food. Most all recipes can use double acting baking powder. view less
