The increased strength improves the gas retention of dough and elasticity of bakery products. Rapid oxidation reaction enables shorter storage periods for flour and faster fermentation of dough. Potassium bromate, which ADA replaces, has shown the potential as a carcinogen. Because many countries have forbidden the use of bromates, ADA can be used as an effective alternative.
