Natamycin can effectively inhibit not only the growth of the most moulds and yeasts but also the production of their toxin, and with low toxicity against mammalian cells, but work resultless in hindering the growth of some microbes like bacteria and virus. Natamycin is used in the food industry as a preservative to inhibit fungal growth on food. It is applied to take place of chemical preservative such as sodium benzoate and sorbic acid potassium et al., and the amount for application is about 30% of the chemical ones.
