By means of this process the liquid product is sprayed through fine nozzles that form minute drops which pass through a chamber where a flow of hot air evaporates the humidity present in the product and therefore powder is obtained. The result is the achievement of a low granulometry rice powder with an extremely reduced bacterial load that is lactose-free, gluten-free, soluble and it has a characteristic delicately sweet flavour. The extraordinary versatility of the rice powder, its typical nutritional and organoleptic profile together with its particular chemical-physical characteristics allow its use in formulations used in the food and pharmaceutical industries. Room temperature and controlled temperature food preparations, frozen food, drinks as well as both fresh and long-life products benefit from rice powder. view less

The harvesting areas are mostly situated in west Africa and India. Gum Karaya is a high molecular-weight acelytated polysaccharide composed of galactose, rhamnose, glucuronic and galacturonic acids. The molecular weight is between 5 000 000 and 8 000 000. Gum Karaya of superior grades comes in tears of variable sizes , pale yellow, pearly, translucent and striated. Average grades have a yellow or pink colour, while low grades are brown. Gum Karaya may be used in oil in water emulsions, encapsulations, as a thickener - stabilizer in soft drinks and as a thickener, fibre enrichment, fat replacer and stabilizer in dairy products. view less

Its characteristics render it ideal compared to other starches for the food industry thanks to the very small dimensions of its particles (2-8 microns). The smaller grain provides for an increased sticking quantity and therefore the rice starch absorbs a major quantity of product on its surface, for examples flours and emulsifying agents. Moreover, thanks to its white colour, it provides for a smooth and glossy finishing, when used as an overlaying ingredient. Rice starch is used in the food industry for its thickening properties. Thanks to its very neutral flavour it does not interfere with the product's final taste: by quickly melting, smells and flavours reach the palate rapidly and unaltered. view less

Shellac comes in glossy, fine flakes of light yellow to a dark brown colour (depending of the quality) It can be waxy (native form) or dewaxed. Bleached shellacs come as a cream coloured to yellow powder. Shellac is a resinous secretion of tiny insects, called Laccifer Lacca (coccoidea family) to protect the breeding.
